HIST 31003 Latin American Food in Global Context

This course examines the role of food in Latin American social, cultural, economic, political, and environmental life, since the fifteenth century. It centers Latin America within key transformations in the global history of food, from the Columbian Exchange to contemporary food sovereignty movements, and asks how those historical shifts impacted foodways. In this course, food is much more than lens of analysis; it is a hands-on and embodied experience that empowers us to engage all of our senses to advance our learning. Buen Provecho!
